Vegetarian Lentil Soup Recipe



This is a delicious Vegetarian Lentil Soup that touches the soul of soup lovers. With sliced carrots, chopped onions, minced garlic and red wine vinegar to perfect the flavor and aroma, how could you go wrong?

A vegetarian soup that will make your mouth water and taste buds tingle through your whole meal.


  INGREDIENTS                        COOKWARE

  • 2 Cups Lentils

  • 1 Chopped Large Yellow Onion

  • 2 Minced Garlic Cloves

  • 2 Sliced Carrots

  • 2 Chopped Celery Stalks

  • 1 1/2 tsp Salt

  • 1/2 tsp Black Pepper

  • 6 1/2 C Vegetable Broth

  • 1/2 tsp. Lemon Juice

  • 2 Diced Tomatoes

  • 1/2 tsp Oregano

  • 1 1/2 TBS. Red Wine Vinegar
  • 1 Large Pot

  • 1 Large Frying Pan

  • Food Processor or Anything that will chop

  • Ladle

  • Spatula

  • Dry measuring cups & spoons

  • Liquid measuring cup & Spoons

     

     

     

     



  • Preparing for Your Vegetarian Lentil Soup

  • Chop 1 yellow onion and 2 celery stalks. Put them in a large bowl.

  • Mince or crush 2 garlic cloves and put them in the same bowl as above.

  • Core and dice 2 large fresh and fully ripe tomatoes and put them in the same dish along with all the juices.

  • Add 1 1/2 tablespoons of red wine vinegar, 1/2 teaspoon lemon juice, 1/2 teaspoon oregano, 1/2 teaspoon black pepper and 1 1/2 teaspoon salt to the large bowl and mix it up well with your hand.

  • Peel and slice 2 large carrots and set aside in a different dish.

    Time to cook this delicious vegetarian soup


    Cooking Instructions for Your Lentil Soup

  • Put 6 1/2 cups of vegetable broth and 2 cups of dry lentils in to a large pot and heat on medium high heat for 30 minutes. Stirring Occasionally.

  • After 30 minutes add the large bowl of vegetables and herbs to a large frying pan and saute for about 5 minutes. Stirring Frequently

  • After 5 minutes add the mixture to the large pot along with the carrots and simmer on medium heat for 30 more minutes. Stirring Occasionally.

  • Now the time is here and this vegetarian recipe is done. add some parsley flakes for garnish if you like or leave it plain.
