This Vegetarian cajun soup recipe has a variety of different beans, stewed tomatoes, fresh crisp vegetables, just a touch of fresh squeezed lemon juice, and a perfect blend of seasonings, including cajun seasoning, to create a delicious and spicy vegetarian bean soup recipe that you can enjoy by yourself or with your freinds or family.

This is a perfect vegetarian soup for a vegetarian that needs alittle extra protien in their diet, beans are also high in dietary fiber, manganese, folate, iron, vitamin b1 (thiamin), magnesium and potassium.

Lets get started with this healthy vegetarian cajun soup recipe.


  INGREDIENTS                       COOKWARE

  • 20 Oz. package of dried mixed beans

  • 1 Large Yellow Onion

  • 1 Celery Stalk

  • 1 Beall Pepper

  • 1 Minced Garlic Clove

  • 1 Lemon

  • 15 Oz. can of Stewed Tomatoes

  • 2 tsp. Paprika

  • 1 tsp. Chili Powder

  • 1 1/2 tsp. salt

  • 2 TBS. Cajun Seasoning

  • 4 C. Vegetable Broth

  • 8 C. Water

  • 2 tsp. Olive oil
  • 1 Large Pot

  • 1 Large Frying Pan

  • Food Processor or Anything            that will Mince

  • Ladle

  • Spatula

  • Dry measuring cups & spoons

  • Liquid measuring cup

  • Large Bowl

  • Juicer

  • Strainer / Collander

     

     

     

     



  • Preparing the beans for your Vegetarian Cajun Soup Recipe.

  • First, you will need to soak your beans, if you don't . You will have a hard time cooking them.

    Beans need to be soaked to absorb the moisture, so that they can cook evenly without cracking and to greatly reduce the cooking time. For a vegetarian this is very important, the longer you cook the beans the more nutrients you lose, and beans are a big part of most vegetarian diets.

    Soaking beans also help you digest them by getting rid of most of the complex sugars and softening the beans which also helps with the amount of gas they give you.

    You can add about 1/8th of a teaspoon of baking soda to the water while its soaking to help break down the complex sugars that cause gas.

    Before you actually soak the beans you need to put them on a plate and go through them and pull out any debris like small stones and shrubs. Then put them in a strainer and rinse them off.

    When you have sorted through the beans you can begin to soak them.

  • The quickest way that I know of without using a pressure cooker is to boil the beans in 3 times as much water as the amount of beans for 3 minutes. Then remove the pot from the stove top then cover it and let them set for about 2 hours.

  • Using a pressure cooker can greatly reduce this time. It's by far the absolute fastest way to soak beans. All you do is bring it to pressure and cook the beans for about 5 minutes, then remove it from the heat and let the pressure drop and they are ready to use.

  • The alternative to both of these is just letting them soak overnight .

    When using any of these methods use 3 times as much water as the amount of beans. Make sure to rinse the beans and to discard the water you used for soaking.


    Preparation for your Vegetarian Cajun Soup.

  • Chop 1 yellow onion, 1 bell pepper, and 1 rib of celery and set them aside.

  • Mince 1 garlic clove and set it aside.

  • Juice 1 fresh lemon and set aside the juice, discarding the rest of the lemon.


    Cooking your Vegetarian Cajun Soup.

  • Add 8 cups of water to a large pot then add the beans. Bring to a boil. Then reduce the heat and simmer covered for 1 hour. Stirring Occasionally. DO NOT BOIL unless you want mushy beans without the shell .

  • While the beans are simmering add 2 teaspoons olive oil to a large skillet / frying pan and heat on medium high.

  • Add the garlic, onions, bell pepper, to the large skillet and saute for about 5 minutes. Stirring frequently.

  • After 5 minutes is up add the mixture in the skillet to the pot along with 1 teaspoon chili powder and 2 teaspoons paprika to the beans. Stir Well.

  • After the large pot of beans has simmered for an hour add a 15 ounce can of stewed tomatoes, chopped celery, 4 cups of vegetable broth, lemon juice, 2 tablespoons of cajun seasoning, and 1 1/2 teaspons of salt. Stir well and simmer uncovered for another 30 minutes. Stirring Occasionally.

    After 30 minutes is up stir well and latel out a couple spoonfuls of Vegetarian Cajun Soup and pass it around. If its not quite spicy enough for you you can add some more cajun seasoning.
